I come from a family of great cooks who love to eat. In my family, we revolve all holidays, trips and gatherings around the food. It has always been about who is cooking and what we were eating. JB & ME is a combination of my initial’s and my brothers. My mother’s style and technique of cooking has influenced the way I eat and cook. I continued my passion in college with a small catering business. Then, to New York to complete a culinary degree at The French Culinary Institute. Shortly after graduation I began working on the line at Scott Conant’s Italian restaurant, Scarpetta in New York City. These experiences have taught me that good food can be achieved with a few techniques, quality ingredients, and lots of love.
Marcel Boulestin said it perfectly, “Cookery is not chemistry. It is an art. It requires instinct and taste rather than exact measurements.”
Time, love, and heart goes into every dish I make. I get super excited about cooking, eating, and shopping for food. My goal is to help support local farms and businesses who strive to produce healthy and sustainable products. The focus of the food at JB & ME is organic and seasonally driven with a heavy emphasis on locally produced food when available in Telluride and the surrounding cities.
